Smoothie Recipes for Spring
Spring brings with it an inherent lightness, new beginnings, and of course sweet fresh fruits and crisp veggies. As the sun shines longer, I find myself craving refreshing, healthy and satiating treats from the kitchen. What hits all the way around? Smoothies.
Juicers aren't always easy to clean, so rather than pressing a kale and spinach combo, this Green Smoothie, a blended mixture, will help you get in your daily dose of potent greens. Now if you're looking for more of a natural milkshake, this Nut Butter, Banana, & Oat Smoothie will make you smile and fill you up.

Green Smoothie
2 cups cold coconut milk (you can also use almond or soy)
1 frozen banana, peeled and cut into chunks (be sure to do this before freezing)
1 cup baby spinach
1 cup kale leaves, chopped and ribs removed
1/2 apple (your favorite variety), peeled, cored, and cut into chunks
1/4 lemon, peeled and separated into segments
1/2 inch piece of fresh ginger, peeled and chopped finely
Add all ingredients to a blender and puree until smooth and completely combined. Enjoy!
Nut Butter, Banana, & Oat Smoothie
2 cups cold almond milk (you can also use soy or coconut)
1 frozen banana, peeled and cut into chunks (be sure to do this before freezing)
1/4 cup peanut OR almond butter
1 heaping teaspoon honey
2 teaspoon old fashioned oats, ground fine
In a spice or coffee grinder, grind oats into a fine powder. A food processor will work here, you just might end up with a smoothie that has a crunchier texture (also yummy).
In a blender combine almond milk, banana, peanut butter, honey, and ground oats, until smooth. Pour into a glass and enjoy immediately.
